Easy Pasta Salad Recipe

The weather has finally broken here in NY! Let the church say, AMEN!

For this blissfully single girl – warmer weather means I can enjoy a quick and fun family dinner outside, on the grill.

There’s nothing like outdoor dining. I simply adore sitting back and looking out at the greenery of the surrounding trees.

I tend to sit behind a fire and think : “My God. I’m a single mom. I own my house. This is MY backyard. I managed to accomplish this huge feat on my own. Now, I’m looking at this majestic fire and I’m about to get my eat ON!

Life can’t get any better experiencing these moments.

Cold Pasta Salad

There’s nothing I love more than a cold pasta salad.

I was exposed to and subsequently fell in love with pasta salad when I went to college in Buffalo (shout out to my UB alums – where y’all at??)

I’m Pescatarian, so grilling for me means seafood on an open flame. While I adore seafood, it isn’t exactly filling.

Shrimp and Scallops on the Grill

I decide that Pasta salad – an Italian one, is definitely on the menu as a side accompaniment to my grilled seafood.

My pasta salad recipe is easy and comes together in minutes. The most time consuming part of it includes cooling the pasta and cutting the vegetables for pasta salad and cheese.

I’m a pasta salad bow tie type of girl, but with quarantine, supplies are limited. I’m only able to find the Rotini pasta. Be that as it may, no worries, the pasta salad tastes the same, it’s just the presentation is a bit different.

For this blissfully single bean, my pasta salad Italian dressing of choice is Ken’s Steak House Northern Italian with Basil & Romano. Again, this is a staple since my college days.

But, what I love about Ken’s Steakhouse is that, while I’ve tried others, Ken’s Steakhouse Italian dressings tend to pack more of a flavorful punch.

With the Memorial Day weekend coming up, why not try my pasta salad recipe? Not only is it delicious, but you’ll have a lot left over to munch on during the week.

Easy Pasta Salad Recipe

Prep Time 1 hour
Cook Time 10 minutes
Servings: 4

Ingredients
  

  • 1 lb Barilla Rotini Pasta
  • 8 oz Ken Steakhouse Northern Italian Dressing
  • 8 oz Kraft Natural Cheese – Sharp Cheddar
  • 6 oz Pearls Pitted Ripe Olives – Large
  • ½ Onion
  • 1 Beef Steak Tomato
  • Parsley

Method
 

  1. Put pasta to boil per packaging instructions
  2. While pasta is boiling, prepare pasta salad vegetables
  3. Chop onions, tomato, parsley and set aside
  4. Cube cheese and set aside
  5. When pasta is done, drain and add 2 ounces of Ken's Dressing
  6. Pasta needs to cool, so place in refrigerator for an hour
  7. After pasta has cooled, add vegetables, olives, cheese and the rest of the Ken's Dressing
  8. You're done! Enjoy!
